  • One half cup of fresh coriander
  • One tablespoon of sugar
  • Two tablespoon of fish sauce
  • One egg white

What you need to do:

Place a metal container on the refrigerator. Make the tomato sherbet by processing the tomato on a blender until finely chopped. Strain. Remove the pulp and seeds. Add the coriander, sugar and fish sauce to the tomato juice. Combine well. Cover with a foil and freeze for more than 5 hours.

Afterwards, break the sherbet into a food processor. Blend until creamy. Cover and refrigerate again for another five hours.

Grate the rind of the lemon. Juice them all out. Combine the remaining ingredients on a small bowl. Refrigerate.

Serve by placing steamed oysters in individual serving glasses, topped off with the sherbet and lime mixture. Enjoy!

Dill and Horseradish On Poached Salmon

 

What you need to have:

  • One whole salmon, remove scales
  • One onion, sliced thinly
  • Three pieces of bay leaves
  • Three pieces of thyme
  • Three pieces of sprigs fresh dill
  • Two tablespoon of lime juice
  • One teaspoon of ground pepper

  • One and a half cup of light sour cream
  • Two and a half tablespoons of lemon juice
  • One and a half tablespoon of horseradish cream
  • One tablespoon of fresh dill
  • On half teaspoon of salt
  • One half teaspoon of pepper

What you need to do:

Create a dill and horseradish cream by combining all of the ingredients in a small bowl. Add enough salt and pepper. Stir well and set aside covered with a plastic wrap.

Measure the thickest part of the salmon. Place it in a fish kettle before arranging the onion, bay leaves, thyme, and dill around the salmon. Season with pepper. Add cold water enough to cover the salmon, then add the lime juice. Place the kettle on the burner under moderate heat. You can use a preheated grill or hotplate. Never let the water boil, just a bit of simmer will do. This usually takes around 20 minutes.  You can adjust the heat to low level to prevent it from boiling. Cover the kettle, and cook for tn more minutes. Afterwards, you can remove the salmon. Transfer it into a plate, so that you can proceed to skinning it. Use a sharp knife to remove the side facing upwards Coat with enough pepper.

Divide the salmon into smaller portions. Serve with the cream.
